(Foto 1) es una planta anual, de verano, que pertenece a la familia de las Lamiaceae; es originaria de áreas montañosas de México y si bien resulta una verdadera novedad en nuestro mercado, se sabe que hace ya 3500 años a.C. era conocida como un importante alimento-medicina. En la época precolombina era para los mayas uno de los cuatro cultivos básicos destinados a su alimentación, junto al maíz, el poroto y el amaranto. Con el paso del tiempo su uso cayó en el olvido y fue a finales del siglo pasado que el interés por la chía resurgió, ya que se la puede considerar una buena fuente de fibra dietaria, proteína y antioxidantes. En el año 1991 se reconocieron sus propiedades y fue reactivado su cultivo gracias a un programa de desarrollo e investigación de la Universidad de Arizona, promoviendo la recuperación de este cultivo subtropical en EEUU, México y Argentina.
